70cl Highland Park 12 Year Old~~Located on the Orkney Islands, one of the northern most parts of Scotland, is the Highland Park distillery. Founded on this remote and windswept island in 1798, the distillery has, for more than two centuries produced a full flavoured, single malt scottish whisky.

Made from the best Barley malted over peat fires; merged with the unique spring waters of the island; and aged in casks for twelve long years that shape its rare and very distinctive character.

Its product retains much that is traditional, even original. It has its own floor maltings and peat beds (the peat is cut shallow to impart a light 'rooty' character) and two traditional peat-fired kilns. During malting a little heather is burned.

The Highland Distillery has more than an affinity with the West Highlands in its flavour than with the palish, fragrant, fresh flavoured North Highland groups of malt.

75cl Double Champange Bollinger Gift~~Following the harvest period, Bollinger's decisions on blending are not made before January. The blend for the Special Cuvée is an ideal version of the classic Champagne blend, using the different grapes of a given year from a variety of crus, with the addition of older, reserve wines. This blend necessarily incorporates subtle variations each year whilst remaining consistent to a style. It is, therefore, the hardest of all Bollinger to make. It contains the full expression of the Bollinger style and the House feels it should be judged on this - its benchmark wine.

Grande Annee, the name, signifies that Bollinger's vintage champagne is only released during 'great' years.

The Grande Annee blend comes only from a particularly fine harvest. When such a harvest occurs the House selects its best wines, cru by cru and grape variety by grape variety - the key to the particular year. Each wine is individually fermented in oak casks prior to blending. On average, the blend is composed of 65% pinot noir and 35% chardonnay.
