75cl Pol Roger Vintage~~Intense gold with persistent fine mousse. The nose opens with floral rose notes and warms to toasted brioche. The mouth is full and fresh with spicy floral notes (wallflower or nasturtium), underpinned with candied yellow fruit.

The finish is long and dry. This is a classy mid-term vintage from Pol Roger that will continue to improve for at least 5 years in bottle and in magnum for 10-12 years.

Typically this has the power to match fine dining and would work well with lobster or other crustaceans as well as rich or pungent or spicy dishes.

Vintage champagne is by definition the wine of a single year and it must rely on the success of that harvest alone. 75cl Bollinger Rose~~The special non-vintage rose is the first wine to come from Bollinger for more than 30 years - in the Seventies the Bollinger La Grande Annee rose was introduced.

This non-vintage model has been modelled on its Special Cuvee blend, combining the fruits of previous harvests with reserve wines from their cellars in Ay.

75cl Veuve Clicquot Rich Champagne~~The climactic conditions for 2002 were ideal, characterized by low rainfall and drier weather with a healthier atmosphere than the previous years and few unfavourable incidents. The winter was mild overall despite quite severe frosts around the winter solstice (21.12.01).

The spring was superb with only slight spring frosts causing very localised damage during the night of 15 April. July and August were warm with the occasional thunderstorm and the threat of drought was kept at bay by some welcome rainy spells. There was then little more rain for the rest of September where sunny, windy conditions prevailed.

This led to a rare concentration and exceptional ripeness of grapes with a potential alcohol content of 10.28% and total acidity of 7g/l (eq. H2SO4). Harvesting started on 12 September for the earliest plots and lasted through to 28 September for the latest.

The Vintage Rich 2002 is made up of 60% Pinot Noir, 7% Pinot Meunier and 33% Chardonnay. The choice of grape classification is of vital importance. The blendincludes 17 crus only, which are either Grand or Premier Crus. These are located in the Montagne de Reims including Pinot Noir from Verzenay (Grand Cru) and Pinot Meunier from Ludes (Premier Cru), in the Grande Vallee de la Marne with Pinot Noir from Ay (Grand Cru) and in the Cote des Blancs where Le Mesnilsur-Oger constitutes one of the best Chardonnay (Grand Cru) vineyards. 75cl Bollinger Vintage La Grande Annee~~Grande Annee, the name, signifies that Bollinger's vintage champagne is only released during 'great' years.

The Grande Annee blend comes only from a particularly fine harvest. When such a harvest occurs the House selects its best wines, cru by cru and grape variety by grape variety - the key to the particular year. Each wine is individually fermented in oak casks prior to blending. 75cl Laurent Perrier Rose~~The shape of the badge on the bottle dates back from Henry V and is one of the rare Pink Champagnes obtained by maceration which gives its remarkable flavour.

10 different crus originate from the most beautiful areas of Champagne; Ambonnay, Bouzy, Louvois and Tours sor Marne.

Maturation takes a minimum of four years and disgogement is carried out manually.

100% Pinot Noir, a salmony colour, frank and fresh on the nose with a large array of small red berries.

75cl Lanson Noble Champagne~~To the eye, the Noble Cuvée Blanc de Blancs 1995 has a green gold colour. In the glass, it exudes constant strings of very delicate bubbles.

To the nose, it exudes a generous acacia and citrus fruit bouquet.

To the palate, the full, well-rounded and long lasting concentration of flavours gives this wine its charm, and ends with a final citrus flourish that bears a double seal of quality: the Lanson taste and the year that was 1995.

75cl Veuve Clicquot La Grande Dame~~The Cuvee - Uncompromising quality. The Star of La champagne is composed by only the best crus: 64% Pinot Noir grapes from the Grands Crus at Ay, in the Grande Vallèe de la Marne, and at Verzenay, Verzy, Ambonnay and Bouzy in the Montagne de Reims.

36% Chardonnay grapes from three Grands Crus: Avize, Oger and Le Mesnil-sur-Oger in the Cote des Blancs.

On the first nose, typical Chardonnay characteristics come to the fore, with the arrival of floral and mineral aromas (acacia, ferns, chalk). By agitating the wine, scents of candied fruit (citrus fruits, apricots, quince) and sweet almond emerge, to reappear later in the mouth. After rotating the wine for a few minutes more, rare notes such as peaty malt, tobacco and delicate herbs, are gradually unveiled.

This aromatic, impressively complex bouquet is confirmed in the mouth.

75cl Pol Roger Cuvee Sir Winston Churchill~~Churchill's relationship with Pol Roger dates back to 1945, although he had been a loyal customer as far back as 1908. At a luncheon given by the British ambassador to France after the liberation of Paris, Churchill met the charming and captivating Odette Pol-Roger and began a friendship, indulged by his wife Clementine, which lasted until Sir Winston's death in 1965.

Each year on his birthday, Odette would send him a case of vintage champagne. In honour of his friendship, Churchill named one of his favourite racehorses after her, and made sure that she was invited to lunch at the British embassy every time he was in Paris.

Despite never actually visiting 44 Avenue de Champagne, Churchill proclaimed it 'the most drinkable address in the world'. So closewas his relationship with the family that, on Churchill's death, Pol Roger put black-bordered labels on the bottles destined for the UK.

In 1975, Pol Roger went one step further and named their prestige cuvee after him, making it in the robust, mature style that he liked so much.

The exact composition of this Cuvée is a family secret but it is likely that Pinot Noir dominates 70-80% of the blend with the rest being Chardonnay.

The grapes are all from Grand Cru vineyards which were under vine during Churchill’s lifetime and it is only made in the very best vintages. The 1998 vintage shows all the hallmarks of a truly outstanding year with high natural sugar content in the grapes and an excellent level of acidity indicating an exceptional overall balance and long ageing potential.

Conditions suitable for making Dom Perignon white vintage do not guarantee the production of a Rose.

The pale salmon colour is achieved by the addition of still red pinot noir wine to a blend of still wines made from pinot noir and chardonnay. The pinot noir wine must be of exceptional quality. The inclusion of chardonnay is important to the character of Dom Perignon Rose, a vital ingredient in producing a wine of perfect balance.
