75cl Heidsieck Monopole NV Blue Top Champagne~~An outstanding Champagne from a top quality House. This Non-Vintage is one of Champagne's best kept secrets.

Heidsieck source fruit from all over the Champagne region. Working closely with growers ensured the vineyards were managed to provide quality fruit. The grapes were hand-picked, gently pressed as whole bunches and fermented at cool temperature in stainless steel tanks. A high percentage of Pinot Noir and Pinot Meunier gave the wine weight and depth. Three grape varieties come into making of Lanson Brut: Pinot Noir and Pinot Meunier (black grapes) and Chardonnay (white grapes). An impressive range of 40 to 50 crus are blended together to form this Champagne and they are all vivified seperately so the cellar master has an exceptional choice of aromas available to him, thus guaranteeing the consistent Lanson taste at all times.

Lanson is one of the very few Champagne Houses not practising malolactic fermentation, a fact to be noted in Champagne. 75cl Bollinger Special Cuvee Champagne~~Following the harvest period, Bollinger's decisions on blending are not made before January. The blend for the Special Cuvée is an ideal version of the classic Champagne blend, using the different grapes of a given year from a variety of crus, with the addition of older, reserve wines. This blend necessarily incorporates subtle variations each year whilst remaining consistent to a style. It is, therefore, the hardest of all Bollinger to make. It contains the full expression of the Bollinger style and the House feels it should be judged on this - its benchmark wine.

The denomination Special Cuvée was created in 1911. The idea came from William Folks, then partner of the illustrious London House of Mentzendorff. This great wine lover felt it was an insult to simply call this great wine "non vintage". The suggestion of naming it "Special Cuvée" was immediately approved by Monsieur Bollinger.
A blend par excellence, the Special Cuvée is the purest expression of the Bollinger style; of its craftsmanship and its singular conception of what a champagne should be. 75cl Moet & Chandon NV Brut~~Brut Imperial is the archetypal Moet & Chandon marque.

An harmonious blend of all three grape varietals and reserve wines.

Brut Imperial is a subtle, drier-styled champagne, pale yellow in colour with shades of green, delicately vinuos with a lime and vine blossom attack. Predominantly Pinot characteristics being very ample on the palate with a discreet finish.

75cl G.H.Mumm Cordon Rouge Champagne~~A true classic with a unique character and irreproachably consistent taste, it's name alone conjures up a whole world of flavour.

All the richness and finesse of the Mumm vineyard is expressed in Cordon Rouge. In the late nineteenth century, this champagne was decorated with the famous red ribbon, as a tribute to the Legion d'Honneur.

75cl Lanson Rose Champagne~~Lanson was one of the first brands to offer Rosé Champagne. In this respect, the House has over 50 years experience.

Rosé derives its pink tint from the blending of the 3 classic grape varieties, Pinot Noir, Pinot Meunier and Chardonnay. It is produced in the traditional way with a small amount of fine red wine made exclusively from Pinot Noir to give the wine its colour. Lanson Brut Rosé retains the same consistent personality. Indeed, being a non-vintage allows the blending of 40 to 50 cuvees of different years.

After 3 years of ageing in the cellars, this blend becomes one of the most sought after and consumed champagnes in the world.

75cl Veuve Clicquot Demi Sec~~True to the structure of Veuve Clicquot Wines, the Demi-Sec is blended largely from Pinot Noir and Pinot Meunier. The blend is completed by about a quarter of Chardonnay and 15-25% of reserve wines. I higher dosage gives it richer notes with detracting from its freshness.

A beautiful yellow colour with deep golden glints, and fine, even mousse. An intense fragrance reminiscent of ripe fruit (candied citrus fruit, fruit liqueurs) with notes of brioche and toast. Round and mellow in the mouth, with mild acidity maintaining a pleasant silkiness.

The practice of decanting this wine, which dates to Madam Clicquot's time, makes it even more delectable.

The Demi-Sec is at its best with desserts. Pastries and desserts based on fresh fruit, citrus and dried fruit will lend delightfully with the wine's smooth qualities.

75cl Veuve Clicquot Yellow Label~~A Champagne House is eventually judged on the quality of its Brut Non Vintage. It is in the making of such a wine that the true Art of Champagne blending reveals itself.

This is an art in which the House of Veuve Clicquot excels. Our Brut Yellow Label reflects the superb vineyards we own and the consistent nature of our House style. The predominance of Pinot Noir provides the structure that is so typically Clicquot, while a touch of Pinot Meunier rounds out the blend. Chardonnay adds the elegance and finesse essential in a perfectly balanced wine.

Grapes from as many as 50 to 60 different Crus go to the blending of Yellow Label. Traditionally, the proportion of each grape variety used is : 50 to 55% Pinot Noir - 15 to 20% Pinot Meunier - 28 to 33% Chardonnay.

These figures vary slightly from year to year according to conditions. 75cl Piper Heidsieck Rose Champagne~~A charming wine with delicate and enchanting accents. It gives an impression of youth and vigour but also tenderness and serenity. The ultimate in refinement.

Based on a blend of about fifty crus; the same approach to blending as that of the Brut Cuvee, with the addition of a proportion of red Champagne wine, which gives this wine not only a style typical of Piper-Heidsieck but also a distinctive colour and fruity taste. The harmony of the blend develops during a long maturing process lasting at least thirty months in the Piper-Heidsieck chalk cellars.
A carefully studied simplicity that will enable you to express a spontaneity full of charm.
An intense colour, a clear and deep pink, whilst on the nose, the first impression is fresh, suggesting the high spirit and vivacity typical of the Piper-Heidsieck style. It has a strong aroma of red fruit, dominated by the Morello cherry. This is followed by a fragrant harmony of citrus fruit, mandarins and blood oranges. The final impression leaves a hint of cinnamon.

75cl Laurent Perrier Brut Champagne~~Laurent Perrier has become one of the great Champagne names by achieving a consistently high standard.

This delightful wine has a pale golden colour and fine citrus notes in the bouquet, confirmed on the palate, followed by a slight yeastiness and some biscuity flavours.

75cl Taittinger Comtes De Champagne Rose~~The Taittinger headquarters are in Reims, situated above some magnificent 4th century Roman cellars which formerly belonged to the Benedictine monks of the abbey of St Nicaise. The vast expanse of tunnels and cellars are perfect for the slow but necessary ageing process involved in making this great Champagne.
The origins of Champagne Taittinger date back to the original house founded in 1734 by Jacques Fourneaux. Its links to the Taittinger family however began in 1931, when it was purchased by the founder of today’s company; Pierre Taittinger. Since 1960 the house has been headed by Pierre’s son, Claude Taittinger, who is also the winemaker. The hallmark of the Taittinger blend is the high percentage of Chardonnay it contains – anything from 45% in the Brut Réserve Non Vintage to 100% in the prestigious Comtes de Champagne Blanc de Blancs.
Tasting Note: Light pink colour, lots of aromas of spicy strawberry, redcurrant, blood orange and minerals on the nose. 75cl Taittinger Brut Rose~~A blend of various Champagne wines from several harvests. A small quantity of red wine from our own vineyards is added before bottling to give this wine its delightful pink hue.

The colour, brilliant pink, is shimmering and intense. The bubbles are fine and the mousse persistent.
The nose, satisfyingly intense, is both fresh and young. It gives off aromas of red fruit (freshly crushed wild raspberry, cherry and blackcurrant).

On the palate, this is a velvety wine of fine balance, and body - a subtle wine with flavours of fresh fruit.

In all, a very pleasing wine of balance and youth. A wine for both early and late evening. A delicious accompaniment to fruit desserts (fruit tart, fruit salad).

75cl Piper Heidsieck Demi Sec~~On the nose: First come floral notes of violet leading to generous aromas of dried fruits, caramelised pear, cinnamon and vanilla.
