The site of whisky making for many generations, the distllery was formally accorded legal status in 1824. It has since become famous as the seat of Scotlands most prized malt whisky.

What is the secret of this legendary single malt? Since time immemorial, The Macallan has been distilled by craftsmen on the same estate in particularly small, hand-beaten copper stills and, whilst other distillers no longer insist on using oaken sherry casks, whilst at Macallan this costly tradition is maintained. The results are shown partly in The Macallans sumptuous colour, partly in the nose and wholly in the glass.

70cl Highland Park 12 Year Old~~Located on the Orkney Islands, one of the northern most parts of Scotland, is the Highland Park distillery. Founded on this remote and windswept island in 1798, the distillery has, for more than two centuries produced a full flavoured, single malt scottish whisky.

Made from the best Barley malted over peat fires; merged with the unique spring waters of the island; and aged in casks for twelve long years that shape its rare and very distinctive character.

Its product retains much that is traditional, even original. It has its own floor maltings and peat beds (the peat is cut shallow to impart a light 'rooty' character) and two traditional peat-fired kilns. During malting a little heather is burned.

The Highland Distillery has more than an affinity with the West Highlands in its flavour than with the palish, fragrant, fresh flavoured North Highland groups of malt.

The water rises from peat and flows via the river Laggan for eight miles to the distillery. The company has its own maltings and uses a gentle technique of peating. The maturation warehouses are doused with four or five feet of water at high tide. All of these factors, and more, create the Bowmore character.

Aromas of burnt peat and chocolate. Balanced, rich and smooth with the characteristic peat, and trace of iodine, of Islay. Smoky, with a hint of seaweed.

70cl Aberlour 10 Year Old~~Aberlour is a pure single highland malt from Speyside. Aberlour was founded in 1826 by James Gordon and Peter Weir at the feet of Ben Rinnes, from whose slopes it draws its water and said to be an important characteristic of its distinctive flavour.

The distillery was rebuilt in 1879 after a fire and it is this date which appears on the label.

70cl Laphroaig 10 Year Old~~Laphroaig Malt Whisky is distilled in the Islay region of Scotland. Laphroaig (pronounced la-froyg) is one of the most distinctive of all malt whiskies. The distillery was built in the 1820s by Donald and Alex Johnson whose family name is still on the label. In 1847 Donald died in a somewhat bizarre accident after falling into a vat of partially made whisky ('burn't Ale').

Laphroaig (Gaelic: The beautiful hollow by the broad bay) has its own peat beds on Islay. Its maturation warehouses face directly on to the sea.

For many, it is an acquired taste, but one which rewards persistance. Its palate is smokey with a long aftertaste. If you like Islay smokey whiskies, then you'll love this one, you can almost taste the sea.~70cl Laphroaig 10 Year Old|1981203005|~19850~19978~~

70cl Glenfiddich Caoran Reserve 12 Year Old~~The newest addition to the Glenfiddich range.

A true blast from the past, Glenfiddich Caoran Reserve revives a forgotten taste: a bold, powerful single malt Scotch whisky that captures its native rugged landscape with every mouthful. First comes a smoky aroma, then spicy top notes that develop into a characterful blend of sweet fruit with distinctive peaty undertones and a smooth, lingering finish.

Its name, pronounced ku-ran, comes from the Gaelic for "peat ember" - this whisky's underlying theme. Its inspiration comes from the days when coal shortages meant greater amounts of local peat were used to dry the malted barley. 70cl Glenmorangie Sherry Wood Finish~~This rare Glenmorangie malt scotch whisky has been matured for fifteen years in casks of American white oak, from the Ozark Mountains in Missouri, which have previously been used in the making of bourbon.


The sherry wood finish Glenmorangie is a drink of real delight, a beautifully golden malt that has a sort of elegance about it. When you nose it, you get a complex aroma, with sweet sherry wine notes and traces of honey.

Just add a touch of water and citrus fruits emerge and maybe a trace of nuts. After a few moments the nuttiness gets stronger and the scent gets sweetened with vanilla and caramel.

The earlier winey notes now become more sherried, the flavour that comes through is full and creamy with subdued flavours which turn in to a light, dry finish, and there's a long lasting after-taste which engages the whole palate.

70cl Glenmorangie Lasanta~~One of the very successful Glenmorangie 'wood finishes'.

A remarkable malt, antique gold in colour: golden but with a rosy hue. This whisky has been matured for at least 12 years in American white oak casks and racked for several years into Ruby Port pipes for 'finishing'.

Malt that's matured as normal in traditional American white oak ex-bourbon casks is then transfered into casks that used to hold fine port for a final period of maturation.

The end result is a malt whisky with the colour of antique copper and a unique taste.

Add a drop of water and the aromas you get predominate with butterscotch and dark chocolate. But there are also fresh minty notes and a certain dryness a bit like lint.~70cl Glenmorangie Lasanta|1981203005|~19850~19974~~

70cl Dalmore 12 Year Old~~Deep, golden mahogany in colour with orange, marmalade and aromatic spice on the nose.

Elegant and rich on the palate with concentrated citrus, Oloroso sherry with hints of sweet vanilla pod.

The exceptional richness of The Dalmore spirit benefits from slightly longer maturation than is typically practised in Scotland.

So their youngest expression is bottled only after twelve years, rather than the more usual ten. Their Master Blender, with some four decades of expertise, has discovered that the complex spirit from the stills is too rich to be tamed by a single style of cask. He favours fusing together the sweet, vanilla rich whiskies from ex-bourbon barrels with the aromatic, spicy and dried fruits characters from sherry casks from Spain.

70cl Glenfiddich Solera Reserve 15 Year Old~~Matured in three casks: sherry, bourbon and new oak

The Glenfiddich Solera system is unique amongst Scotch whisky distillers. Fifteen-year-old Glenfiddich from three types of casks (traditional American bourbon, Portuguese sherry and new oak) is married in a large Solera vat, made of Oregon pine. The vat is always kept at least half full, ensuring a consistent quality of whisky is maintained whenever it is topped up.

Then this beautifully balanced single malt is left to settle in a small Solera tun before bottling. The result? A full and fruity nose, with delicate honey and vanilla notes. The taste is elegantly smooth, with a deep flavour that reveals fruit, gentle spice and a touch of oak. 70cl Auchentoshan Scottish Malt Whisky Three Wood~~This unique Auchentoshan Whisky has been matured in three diffrent cask types.

70cl Oban 14 Year Old~~Oban has a sweet, peated nose with hints of burnt heather, carried through to the palate with just a touch of creaminess.

The Oban distillery is right in the heart of Oban overlooking the harbour. It is very unusual to find a distillery in a town centre, but it predates the town of Oban. Going back much further, Mesolithic remains were found in a cave at the back of the current site. The distillery was rebuilt between 1883 and 1887 before coming under the ownership of DCL in 1925. The still house was again rebuilt between 1969 to 1972 when the distillery maltings were closed. A Visitor Centre was opened in 1989 which attracts a steady amount of visitors.
In 1990 Oban was chosen by its owners to represent the company in its Classic Malt range. Oban has the distinction of having many Manager's Drams bottlings, which were never commerically released, increasing their collectibility.~70cl Oban 14 Year Old|1981203005|~19850~23620~~
70cl Bruichladdich 12 YO Malt Whisky~~The 12 year old 2nd edition replaces the original 10 as the Bruichladdich Aperitif dram.

Traditional lightly peated Bruichladdich, matured in Bourbon casks to replace The 10 which has now sold out. Casks selected by world renowned Master Distiller, Jim McEwan.

Limited period release.

70cl Macallan Fine Oak 15 Year Old~~Nose: Sublime and full, with a hint of rose and cinnamon.

70cl Glenfiddich Ancient Reserve 18 Year Old~~Produced in small batches, Glenfiddich 18 Year Old combines a touch of sweetness from the Spanish Oloroso wood, with oakiness drawn from the traditional American casks.

Through marrying in wooden tuns (vast vats), the rich, mellow flavours to come together, creating an exceptionally smooth single malt Scotch whisky with notes of spiced apple and robust oak.

Each batch is of a unique and of exceptional quality.

Their master craftsmen have created a complex, mellow single malt Scotch whisky from years of patient maturation in casks of the finest Oloroso sherry and American bourbon.

It is secreted away in their traditional warehouse, where the cool, thick stone walls and low ceilings mature the whisky to perfection.

Years later what emerges is a Glenfiddich Ancient Reserve with an elegant nose, faintly sweet, scented with apple and wood.

70cl Lagavulin 16 Year Old~~The Islay representative in the 'Classic Malts' series is a deep, dry and exceptionally peaty bruiser. Probably the most pungent of all Islay malts, Lagavulin is not for the faint-hearted but inspires fanatical devotion in its many followers.

Nose. Lapsang Souchong and fruity sherry.

Palate. The dryness is at first offset by the sweetness of the sherry character. As the palate develops, oily, grassy and, in particular, salt emerges in a long, sustained, aggressive attack.

Finish. A huge, powerful, bear-hug of peat.

70cl Highland park 18 Year Old~~18 Year Old Highland Park 18 Year Old is an exceptionally fine whisky that builds on the world-class reputation already enjoyed by the 12 Year Old.

All the Orcadian hallmarks of Highland Park are here - the smokiness, the peat, the heather-honey - plus it has gained a glorious richness and spiciness through its longer cask maturation. 

Its elegance and smoothness make the 18 year old a delight to the malt whisky connoisseur.

Colour: Natural colour, burnished gold, clear and bright.
Aroma: Rich, mature oak, top note of aromatic smoke.
Taste: Rich, full flavour; honey and peat.

70cl The Glenlivet 21 Year Old~~A whisky so well knitted. The most oaky and least floral of the range of Glenlivet. But age and a particular selection of casks has achieved a distinguished maturity, almost intimidating. Sherry notes give depth to the distillery character and a cakey sweetness. Aromas are perfectly melted, especially when The Glenlivet 21 Year Old is enjoyed without water. Wood is well integrated but firmly frames the aromatic palette. 70cl Bowmore 18 Year Old~~Released in January 2007, this is a complex and interesting Bowmore, although it takes a little time to open up and reveal its quality. Enigmatic. 70cl Cragganmore 12 Year Old~~Founded in 1869 by John Smith (son of George Smith, founder of the Glenlivet distillery) and located in the Grampian region of Scotland.

This twelve year old is an elegant, sophisticated Speyside malt, with complex aromas.

Amazingly fragrant with a sweetish note and a smokey maltiness to the finish.~70cl Cragganmore 12 Year Old|1981203005|~19850~19963~~

70cl Talisker 10 Year Old~~This ten year old is the only malt produced on the Isle of Skye.

It has a smokey nose and the sweet maltiness is perfectly complimented by its spicy, long finish.

“Famously distinctive Island malt. From the western Scottish island of Skye. I believe that the volcanic rock of Skye contributes to the pungent aroma; peppery flavour; and big finish. Unusual still design may add a further dimension.” Michael Jackson, whisky writer and expert. On the shores of Loch Harport, the village of Carbost is home to Skye’s only distillery producing a wonderfully powerful and award-winning Island malt bottled at above average strength.Talisker's™ soft, peaty process water is drawn from twenty-one underground springs that rise from Hawk Hill (Cnoc nan Speirag) beside the distillery. 70cl Inchgower 14 Year Old~~Inchgower was built in Speyside in 1871 after the distiller Alexander Wilson was forced out of the nearby Tochineal distillery his uncle had built forty years previously when the landlord doubled the rent. 70cl Bunnahabhain 12 Year Old~~Founded in 1883 by The Islay Distillers Co, this single malt from Islay is less peaty than some of the Islay malts.

70cl Glenkinchie 10 Year Old~~Known as "The Edinburgh Malt," Glenkinchie is the Lowland whisky in the 'Classic Malts' range, originally released in 1987. It lasted 20 years before being replaced by the 12 year old.~70cl Glenkinchie 10 Year Old|1981203005|~19850~19958~~
70cl Glen Grant 1957~~Nutty, dry grassy and sherry notes dominate this whisky. An excellent value, well aged Glen Grant matured in fresh sherry butts. Bottled in 2002.

House style: Herbal and nutty when young, but can be a huge after-dinner dram when matured at length in sherry casks.

Set in the town of Rothes in Speyside, Glen Grant is apparently the second highest selling malt whisky worldwide, and was one of the first whiskies to be marketed as a single malt. The 10 year old offers excellent value for money, while the 5 year old is a huge seller in Italy albeit with a very light and spirity nose and taste.
Glen Grant distillery started its official life in 1840, and was founded by the brothers John and James Grant. James' son, a major in the army, collected plants from India and Africa and planted them in the distillery gardens.~70cl Glen Grant 1957|1981203005|~19850~19957~~

70cl Yamazaki Whisky 10 Years Old~~Named after the town of Yamazaki, famed for its pure waters, tea ceremonies and samurai warriors.

Main cask - Puncheon 1st fill, 2nd fill (predominantly American oak.

Body - Medium
Taste - Nutmeg, cinnamon, fennel, bitter sweet
