75cl Laurent Perrier Ultra Brut~~Its creation is contemporary like that of Nouvelle Cuisine. Similar to this lighter, purer way of preparing food, Laurent-Perrier Ultra Brut appears without make-up, in its natural form. It is a brut nature champagne, that is, with no dosage, and making it requires considerable know-how. The blend combines a small majority of chardonnay with pinot noir and is made exclusively with grapes from very ripe harvests. Bunch selection is rigorous, to ensure that only the grapes with high sugar levels and low acidity are retained. These conditions are necessary to create a finished champagne that has the required balance without any dosage. The ageing is long, lasting for at least four years. Its delicate finish, which leaves the palate fresh, and its subtle balance make this the most versatile champagne in Laurent-Perrier's range. Aspect
Very pale and crystal-bright in colour.

Aroma
Intense and complex on the nose, with a wide range of aromas, including citrus and white fruit and flowers, such as Honeysuckle. The combined effect gives off an impression of freshness, much like ocean air.

Taste
Airy and delicate, yet surprisingly long. Floral and fruit flavours combine with mineral notes to give a wine that is pure without being austere. he finish is long and leaves the palate clean.

SERVING
Serve between 8°C and 10°C.

75cl Louis Roederer Brut Champagne Bottle~~Brut Premier is the embodiment of Louis Roederer style, combining all the fruitiness and freshness of youth with the vinosity of a fully mature wine. This is a structured and elegantly mature wine, with a lively attack and a smooth palate.

Blend: 56% Pinot Noir, 34% Chardonnay and 10% Pinot Meunier, including 10% of reserve wines from three former harvests, aged in oak casks for 2-6 years.

Maturation: an average of three years ageing on lees, plus another six months after disgorging.
Dosage: 11-12g/L of sugar from the dosage liqueur.
Tasting notes: a golden colour with fine bubbles and a nose of fresh fruit and hawthorn. Smooth, complex palate mingling flavours of white-fleshed fruit (apple and pear) with red berries (blackberries, raspberries, cherries) and notes of toast and almonds. A pleasurable wine, deliciously smooth and mature.

75cl Taittinger Brut Reserve~~Taittinger Brut Reserve is a blend of Chardonnay wines (40%) and Pinot wines (60%) from 40 different vineyards and matured to perfection. Such a high proportion of Chardonnay is seldom found among the great champagnes.

TASTINGThe colour is brilliant, golden straw yellow. The bubbles are fine. The mousse is both discreet and persistent.

The nose, very expressive and open, is both fruity and bready. It exudes aromas of peach, white flowers (may blossom, acacia) and vanilla pod.On the palate, this lively fresh wine is at once in harmony. This is a delicate wine with flavours of fresh fruit and honey.In all a wine blessed with a well-developed aromatic potential. It is aged for three to four years in the cellars where it achieves perfect maturity.

75cl Veuve Clicquot Ponsardin Vintage 1999~~This vintage is characterised by wines of finesse and great ageing potential.

The growing season of the vines went very smoothly without any major climatic mishaps. After a mild winter, dry and wet moths alternate during springtime. Bud-burst occurs in the third week of April. The flowering takes place quickly, between 16 and 20th June. Weather conditions are favourable and ensure an excellent berry set, with no shatter and very little 'millerandage'.

During the ripening period, weather conditions often vary between very good and less favourable. Nevertheless the grape maturity progresses normally. The harvest last from September 19 to the 27th. They take place under excellent climatic conditions, leading to the perfect ripening of the grapes (9 GL) while preserving a remarkable level of acidity.

This Vintage is made up from twenty villages all classified as Premiers or Grands Crus. They are located in the Cote des Blancs and the Montagne de Reims regions.

The dominance and power comes from the Pinot Noir, which represents 57% of the blend. The finesse and elegance are achieved from a complement of 32% Chardonnay and 12 % Pinot Meunier.

The effervescence is both delicate and long lasting. The bouquet is fine and complex, strong in the aromas of dried fruits and flowers. There is an elegant harmony in the nose around toast and brioche notes. In the mouth, the wine is firm and well structured, with masses of substance and refinement.

Such wine accompanies perfectly lobsters, scallops and sea fish. After a few more years of ageing, one would not hesitate to offer it with poultry or with meat dishes such as veal.

75cl Veuve Clicquot Rose~~Credited as the first Champagne House to produce a rosé, this is a house specialty since the 1775. The robust fruit flavours of Veuve Clicquot's Rosé Reserve results from adding still Pinot Noir wine from Veuve Clicquot's grand cru vineyards in the village of Bouzy. This wonderful, dry Champagne with its light rose glow and copper highlights is an ideal companion for dishes like salmon or poultry and also as an aperitif.

The nose is expressive, with aromas of red fruit (wild strawberry, raspberry and gooseberry) that develop into more complex aromas (fig, fresh almond and bergamot). On the palate, the wine is round and balanced with a lingering finish. The wine has great structure and a strong “vinous” character, derived from superior quality pinot noir grapes. This wine can be classified as a mythical vintage as far as its maturing potential is concerned.
